Hi everyone. Just want to say thanks for all the help I have gotten so far, and I am hoping you all might be able to help me with what seems to be the last stumbling block to getting all of the initial functionality I have planned for this server working.

I am trying to install a Windows 11 VM, and when booting it puts me at the Interactive UEFI screen.

This is my configuration:
Virtual CPUs: 2
Cores: 1
Threads: 1
Memory Size: 8.00 GiB
Boot Loader Type: UEFI
System Clock: LOCAL
VNC Port: 42411
Com Port: /dev/nmdm1B
Description: Windows VM
Shutdown Timeout: 90 seconds

I pointed it to a local .iso file I had uploaded, at path: /mnt/PoolOne/images/Win11_22H2_English_x64v2.iso. In the devices list, the CD/ROM drive is listed at priority 1000 and I do see it listed in the interactive UEFI screen.

This happened to me.
Windows was going in boot order and asked to "Press any key to boot from cd-rom" and then was changing order to hard-disk which ofcourse was empty.I had a few secs timeout to select cd-rom.
At first i was unable to see that while switching vnc client on/off.
I suggest to set vm's vnc device to "Delay VM boot until vnc Connects" and see if that works for you.

Win 11 was a tricky installation for me due to OS requiremets (secureboot controller, ram etc.)

Am I able to change to wait on VNC, or do I need to create a new VM? I wasn't able to find the option to change it.

No need to create a new one.
Go to Virtual Machines/open vm's settings/Devices/VNC/edit and there you'll find it at the top.
