Understanding server PSUs?

I can't seem to figure out standardization in server PSUs. Of course, for for desktops, the ATX form factor and connectors is/are nearly universal, except among some OEMs.

There doesn't seem to be that standardization on the server side. Dell, HP, and Supermicro all seem to use their own proprietary PSU.

I am looking to build a new box, and I am considering buying an off-brand Chassis for it, however I can't figure out which PSU type to use.

That's because there is none. At most, vendors will share PSUs among some of their product lines, across a few generations.

So is there a good route to go in terms of redundant PSU if you want to build a server in an off-brand (not Dell/Supermicro/HP/etc.) chassis?

No, not really. There are some hacky solutions that fit in the ATX form factor, but they're expensive and limited in capacity.
