Thoughts on Used Supermicro servers?

yes, but most times it turns out to be more expensive than buying aachassis with the backplane you want in the first place.
both those statements don't go together very well. I have a 1U Supermicro server and the fan are called screechers for good reason. If noise is a concern, you should go for 3U or 4U which will have a lot more airflow.

The point I was getting at about the 1u server, is that if I get a 4u Gen v1 or v2 Xeon chassis now, can I get a 1u Gen v3 or v4 Xeon chassis later on and put its innards into the 4u system.

Generally looks good, but not sure if that RAID controller can be used as a simple HBA--you might need to replace it, but that isn't very expensive.

What @danb35 said, and those 10 core CPUs are overkill for FreeNAS. With hyperthreading it gives you 40 threads and you are not likely to need that.
I would look for a similar configuration with higher clock and lower cores. A 2.6GHz 8 core or 2.8GHz. The higher clock will benefit single thread applications.
