Is this pool upgrade strategy sensible? Possible future replication problems?

Hi,

I have a "Production" TrueNAS CORE 13.0-U3.1 with a Degraded pool of 6x3TB, no more SATA ports are available on the MB. I want to replace the pool with a 2x12TB mirror pool and also switch to SCALE.

I also just setup a "Backup" server with 2x10TB mirror pool and installed SCALE on it. I want to have both systems online with "Production" backing up to "Backup".

My plan is:
  • From "Backup", which is online now, pull the datasets from the degraded "Production" pool and verify the data (Not sure how to verify yet)
  • Replace the disks in "Production" and install SCALE
  • From the new "Production", pull the datasets from "Backup" and verify
  • Setup periodic replications in "Production" to backup the datasets changes back to "Backup" incrementing of the existing datasets.
My question is: Once I'm done, the datasets on "Production" originated from "Backup" so will I be able to replicated changes made the datasets in "Production" back to "Backup" without starting from scratch?

I don't remember the details but I failed to do something similar a while back. Also during testing I replicated a dataset to "Backup" and I couldn't replicate the changes to it again. Forgive me I don't remember the details/errors.
