Installation on new drives?

Question: Should I partition and format drives first? Or can that be done via the installation process?
Boot drive and Data drives.

No, that's done for you in the installer.

Another newbie question:
I have 2 Data drives which I want to use. One is a 6TB and one is a 8TB.
Can I "partition" the 8TB, into a 6TB and a 2 TB and use the 6TB "part" with the other 6TB drive (RAID), and the other 2TB part with another TrueNAS application?

Short answer: no.

Long answer: yes, but you'd have to partition the drive, create the pool, and do any other maintenance-y stuff at the CLI. If you need to ask, it's a risky proposition.
