Delete, Expand, Put back? Best practice?

I have not done this yet but I just scored a couple extra disks and an ssd for cache. I want to take my main pool and delete it then expand (8 to 12 disk) and put everything back. I have the space to put all the data on a different pool. What is best practice for saving the data and putting it back? I do not think dragging and dropping the files back and forth is best practice.

Two separate steps...
